There are several thoughts on the tradition of freezing the top layer
of your wedding cake for the celebration of your first anniversary.
The first thought is that cake doesnt freeze well for a year!
There
are a couple of ways in which you can ward off the cardboard taste that
goes with long-term storage of the cake. The following is the
recommended method of preserving the flavor of the cake if you wish to
take the culinary risk associated with freezing it. If you choose to
freeze your wedding top cake the recommended procedure is:
1. Wrap it thoroughly in plastic wrap. 2. Place it in the plastic cake container 3. Wrap the container tightly in plastic wrap 4. Place it in a cardboard box 5. Wrap the box in plastic wrap and then freezer paper 6. Label and freeze for your first anniversary.
Another
option that acts as a preservative for storing & freezing cake is
choosing a cake that is made with a liqueur. Cakes such as our
Chocolate Kahlua cake already have the liqueur in the mixture but there
are several flavors that are conducive to having a complimentary
liqueur added to the mix if you are choosing to freeze the cake. Those
flavors include Banana, Rendezvous Raspberry, Chocolate, and
Strawberry. White cake can be flavored with an amaretto liqueur for
its preservative.
